Origin: Huila, Colombia
Farm: La Chapolera
Variety: Red Bourbon – Jamaica
Process: Washed Anaerobic
Tasting notes: Banana bread, mango, dried apricots
Profile: Sweet, fruity, complex, rounded
From the hills of Huila, Colombia, this expressive Red Bourbon lot comes from La Chapolera, produced by Julián A.H. Ruiz, Yaritza A. Guevara, and Henry B. Murcia.
This coffee is built around a carefully controlled washed anaerobic process, designed to bring depth, sweetness, and fruit-forward complexity into the cup. Only ripe cherries with high sugar content are selected, then fermented in stages to create a clean yet vibrant profile.
In the cup, expect a layered sweetness reminiscent of banana bread, followed by ripe mango and soft dried apricot. The acidity is lively and fruit-driven, but beautifully rounded by a sweet, structured body. It is expressive, tropical, and elegant — a coffee with both clarity and character.
A perfect choice for those who enjoy modern Colombian coffees with a distinctive fruit profile, balanced fermentation, and a sweet, memorable finish.
