You might already recognize the name — the Arcila family, renowned producers behind Cofinet, continue to push the boundaries of coffee innovation. We're excited to share this limited infused lot, crafted with their signature precision.
This particular offering is a Peach Process, and it’s every bit as vibrant as it sounds. The aroma alone is intensely sweet and peachy, drawing you in before the first sip.
To create this profile, the coffee underwent a 72-hour dry anaerobic fermentation with dehydrated peaches and a touch of tartaric acid, enhancing the fruit-forward complexity.
After fermentation, it was slowly dried on raised beds under controlled conditions (kept below 35°C) until it reached optimal moisture for roasting.
As always, we’ve tailored this roast specifically for both espresso and filter brewing, highlighting its perfumed sweetness, fruit intensity, and clean finish.
