High in the volcanic region of Chinameca, El Salvador, lies the legendary Los Pirineos Estate, a name synonymous with innovation and quality in specialty coffee. The farm was built to global prestige by the late Gilberto Baraona, who devoted his life to experimenting with rare coffee varieties and pioneering new post-harvest processes that moved Salvadoran coffee beyond the standard washed profile. After his untimely passing in 2020, his children Diego and Fabiola Baraona proudly continue his vision, preserving the same pursuit of excellence and creativity.
This lot features the iconic Pacamara variety — a hybrid born in El Salvador — processed naturally to emphasize sweetness and fruit depth. Cherries are dried whole under the sun, allowing sugars to develop slowly and infuse the beans with lush, layered flavors. In the cup, expect vibrant cherry, sweet marmalade, and rich apricot jam, wrapped in a smooth, syrupy body and a naturally jammy sweetness.
Roasted omni style, it performs beautifully across brew methods: as a filter coffee, it’s lively, complex, and fruit-forward; as an espresso, it’s syrupy and sweet with great clarity.
