Discover a beautifully balanced cup from the highlands of Cajamarca, Peru, grown organically at elevations of 1,600 to 1,800 meters. This washed Arabica coffee, a mix of Caturra, Typica, and Bourbon varieties, offers a mild profile with elegant sweetness, notes of hazelnut and cocoa, and a medium acidity.
Grown by smallholder farmers of the San Ignacio CASIL Cooperative, established in 1966 and now over 240 members strong, this coffee reflects the power of community-driven, sustainable agriculture. With access to shared knowledge, equipment, and infrastructure, the farmers cultivate high-quality, eco-friendly coffee — rewarded with fair prices and long-term development.
Ideal Conditions:
With a climate of 16–20°C and nutrient-rich clay soils, Cajamarca produces coffees known for their structure, smoothness, and clarity in the cup.
